This hardy grain grows high in the Andes Mountains over 12,000 ft. Like its cousin quinoa, it is high in protein, but it does not need to be washed to remove bitter saponin like quinoa does. Traditionally it is lightly roasted and ground to be used in porridge, soups, stews, desserts and drinks. To prepare hot cereal: On low heat, dry roast one cup of Canahua in a thick-bottomed pot, stirring until fragrant. Add 2 1/2 cups of water and a pinch of sea salt. Cover and simmer for 15 to 20 minutes.
